Mexican chicken soup

Chicken Chipotle Soup Recipe for Hcg Diet Phase 2


1Preheat pot over medium-high heat.

2Add garlic, and cook for 3-5minutes. (Heat until you see little bubbles around the garlic.)

3Use a bit of your broth to keep garlic from sticking to the pot, if necessary.

4Add tomatoes, chicken broth, and onion powder, cumin, chili powder, cayenne.

5Bring to a boil. Reduce heat to a simmer, and add chicken.

6Simmer for 20 minutes.

7Stir in cilantro, and simmer for 5 minutes more.


100g cooked chicken, shredded into bite-sized pieces

3-4 cloves minced garlic

1 t cumin

1/2 t onion powder

1/2 t chili powder

1/2 t cayenne (use less if you don't want it as spicy)

diced tomato

2-3 c homemade chicken broth

1/4 c fresh chopped cilantro (optional)

Seriously, I had to salt. I couldn’t eat it without a little bit of salt. I used pink Himalayan salt. Wish it had more chicken too, but for HCG, its not too bad. Sure miss the cheese and tortillas…guess I add that for Phase 3.

How am I the first to review this? Holy guacamole! This is fantastic. I made a family size batch and weighed my portion out, then served it to the rest of the family with avocado and tostitos. Thank you so much! This is a keeper regardless of diet plan.
