P2 Buffalo Chicken and Tomatoes

Buffalo chicken

  • Yields: 1 serving


1Saute’ chicken with onions, garlic, and 1 Tbs. buffalo sauce until lightly browned.

2Deglaze the pan with chicken broth and add tomatoes and spices.

3Simmer, stirring gently for 5-7 minutes adding additional water or chicken broth as needed to create a light sauce.

4Top with fresh herbs or extra oregano and serve.


100 grams chicken

2 medium tomatoes, diced

1/2 cup chicken broth

2 Tbs. buffalo sauce (or cayenne pepper sauce)

1 tsp. onions, minced

1 clove of garlic, crushed and minced

Pinch of oregano

Black pepper to taste
