An Hcg Diet friendly tomato meatball soup, made in the slow cooker. Very filling, very flavorful and a 100% safe Phase 2 recipe.
- Prep: 15 mins
- Cook: 6 hrs
- Yields: Approx 6 Servings

Directions
1Combine all soup ingredients in slow cooker and stir well.
2In a bowl, combine ground meat and ingredients for meatballs. Mix well with hands and form into small meatballs. (Smaller meatballs are better for this recipe so you can get more out of your serving.)
3Note: Since the Hcg Diet does not allow the usual olive oil to keep the meatballs together, it is best to form them into tight balls.
4Drop the meatballs into the slow cooker - do not stir until they have cooked for a while. You don't want your meatballs to be disturbed so they don't fall apart. 🙂
5Slow cook for 6 hours on low heat setting.

This soup was fantastic! I’m so glad I tried it. It was a little too spicy for me, so next time I make it I will reduce the cayenne from 1/2 t. to a dash. You can always add more. Thank you for submitting this delicious soup.
