Hcg Diet Chicken Recipe: Phase 2 friendly. This is a fat-burning, fool-proof, tangy vinegar chicken zucchini soup/dish that can be made in minutes; tossed into a slow cooker or even a skillet and ready FAST! You can even buy a ready-made rotisserie chicken and use the white meat for an even more convenient dinner.

  • Yields: Approx 5 servings

Directions

1Slow-cooker: Cook the chicken separately and pull into pieces. Throw everything into your slow cooker and cook on low for 2 hours or so. You can adjust each ingredient based on your personal taste preferences and it will still turn out fabulous! For Skillet: Cook chicken with garlic and onion. Add crushed tomatoes and all seasonings. Stir in zucchini last and let simmer until zucchini is cooked. Voila! Phase 4 Modification: Add carrots! You can also crumble melba toast on top of the dish as a final touch. Enjoy!

Feel free to adjust seasonings to taste- you can't mess this up!

You can also omit the chicken and increase zucchini for a great tasting vegetarian dish.

Ingredients

3 Chicken breast meat (cooked and pulled into pieces)

1/2 Onion, Chopped fresh

28 oz. Crushed Tomatoes, Canned

2 tbsp basil

1 Zucchini

1/2 cup Apple Cider Vinegar

1 Bay leaf

2 tbsp Minced garlic

1/2 tsp Cayenne (or to taste)

1 tsp Salt (or seasoned salt) to taste

3/4 cup Water
