Easy HCG Diet Phase 2 Recipe “Cream of Chicken” Soup

A delicious and warming soup for a cold day!

  • Prep: 10 mins
  • Cook: 1 hrs
  • Yields: 1 serving

Directions

1 Trim all fat from chicken breast.

2 Place chicken in large pot of boiling, salted water.

3 Boil chicken until a temp of 165 F is reached.

4 Remove chicken from water and set aside to cool.

5 Chop chicken into bite-sized pieces

6 Chop celery stalks into bite sized pieces, and mince a little for garnish if desired.

7 Add chicken broth, milk and all spices into a medium sized pot over low heat.

8 Stir well until spices and well combined into broth.

9 Add celery and chicken pieces.

10 Cover and heat over low heat for 20 - 30 minutes, stirring occasionally.

11 Remove from heat.

12 Transfer to serving dish.

13 Top with salt and pepper and a little chopped celery if desired, and enjoy!

1 protein serving, 1 vegetable serving and your entire daily allotted amount of milk.

*While on the HCG diet you should always mince fresh garlic, rather than using pre-minced garlic. Most pre-minced garlic contains preservatives.

Ingredients

100 g boneless, skinless chicken breast

2 large celery stalks

2 cups HCG Chicken broth (see recipe) or substitute with water

1 tbsp milk (2% fat or less)

2 tsp *minced fresh garlic

1/2 tsp dried parsley

1/2 tsp dried basil

1/4 tsp white pepper (to taste)

1/4 tsp sea salt (to taste)

The original protocol by Dr. Simeons does allow a tablespoon of milk per day. You can get a copy of the manuscript at https://hcgdietinfo.com.
There are thousands of protocol variations now, because every doctor, clinic, practitioner seems to put their own twist on the protocol. This is not necessarily a bad thing, and the only “right” version, is the one that works for you.

Loved this recipe…though mine didn’t look like the pictured soup. I may reduce the amount of white pepper to an 1/8 tsp. Maybe even add some diced onion. Thanks for sharing this recipe!

I started the hcd diet with my dr and absolutely NO dairy is allowed on phase 2 . My question is why do you think this recipe is allowed? Thanks
