- Yields: 6 to 8 servings
1Combine fresh cranberries, stevia, orange juice (with water) and rosemary in cheesecloth in a medium saucepan over medium-high heat.
2Reduce the heat to a simmer and simmer 1 - 4 minutes, depending on how many berries you like whole.
3The berries will "pop" as they cook, which is what you want. You can speed this along by pressing them against the sides of the pot with a spoon.
4When you're satisfied with the consistency (and it resembles actual relish) remove the saucepan from heat and stir in the orange zest. Cover and let stand for about 10 minutes.
5Remove rosemary from the pan and press the cheesecloth against the side of the saucepan with the back of a spoon to extrude all juice.
6Transfer to a serving bowl and let cool to room temperature, then refrigerate.
7Before serving, let come back up to room temperature.
8Garnish with additional fresh rosemary sprig and serve.
