An Hcg Diet friendly tomato meatball soup, made in the slow cooker. Very filling, very flavorful and a 100% safe Phase 2 recipe.

Directions

1Combine all soup ingredients in slow cooker and stir well.

3In a bowl, combine ground meat and ingredients for meatballs. Mix well with hands and form into small meatballs. (Smaller meatballs are better for this recipe so you can get more out of your serving.)

5Note: Since the Hcg Diet does not allow the usual olive oil to keep the meatballs together, it is best to form them into tight balls.

7Drop the meatballs into the slow cooker - do not stir until they have cooked for a while. You don't want your meatballs to be disturbed so they don't fall apart. :)

9Slow cook for 6 hours on low heat setting.

Ingredients

FOR MEATBALLS:

1 lb Ground chicken

1/2 tsp garlic, minced

1/4 onion, fresh minced

2 pinches of Marjoram

2 pinches of Thyme

1 dash garlic powder

1 dash onion powder

1/4 tsp salt (I use pink himalayan salt)

1/4 tsp red pepper flakes

1/2 tsp black pepper

Option to add chopped kale or chopped basil

FOR SOUP: (Great even without the meatballs!)

3 Cups of Water

1 28 oz can of crushed tomatoes

4 tbs braggs aminos

4 tbs apple cider vinegar

1 tbs Italian seasoning

1/2 onion, chopped fresh

1/4 cup fresh basil leaves, chopped

1 tsp garlic, minced

1 Bay leaf

1 tsp ground pepper

1 tsp cayenne

1 zucchini, chunked (or celery) (optional)

1/2 tsp cayenne

1 tsp salt

1 tsp pepper
