1 Trim all fat from chicken breast.
2 Place chicken in large pot of boiling, salted water.
3 Boil chicken until a temp of 165 F is reached.
4 Remove chicken from water and set aside to cool.
5 Chop chicken into bite-sized pieces
6 Chop celery stalks into bite sized pieces, and mince a little for garnish if desired.
7 Add chicken broth, milk and all spices into a medium sized pot over low heat.
8 Stir well until spices and well combined into broth.
9 Add celery and chicken pieces.
10 Cover and heat over low heat for 20 - 30 minutes, stirring occasionally.
11 Remove from heat.
12 Transfer to serving dish.
13 Top with salt and pepper and a little chopped celery if desired, and enjoy!
